About Apululu
The culinary team at APULULU is led by the passionate duo of chef Taimi Carrero Garcia and visual artist Raciel Gomez Golpe. Their combined expertise brings an artistic flair to the dining experience, ensuring that each dish is crafted with love and creativity.
The menu features a variety of enticing options, including:
-
Ropa Vieja Burrito: Shredded beef with congris rice (a blend of white rice and black beans), fried potatoes, avocado, pico de gallo, and a spicy sauce.
-
Caribbean Chicken Burrito: Grilled chicken marinated in citrus and Latin seasonings, paired with congris rice, grilled pineapple, green chili sauce, and crispy corn.
-
Taco Box: A combination of three tacos—pineapple chicken, roasted pork, and ropa vieja—served with red sauce, tortilla chips, and Cuban-style coleslaw.
In addition to these offerings, APULULU is renowned for its Cuban-style paella, which has been voted the best in the Tampa Bay area by The Serious Foodie. This signature dish is typically available during special events and weekends, providing guests with an authentic taste of Cuban culinary tradition.

FOOD CRITIC
“Some of the best Latin American cooking in the whole Tampa Bahy area is now being done at The Foodie Labs – Apululu Latin Street Food is the brain child of Raciel Gómez and Taimi Carrero. They serve comfort food from their origins in Cuba, and their time in Mexico. Delicious food at great prices.“

Tampa Beacon
“After overcoming a difficult journey, cancer and two heart transplants, Cubans Raciel Gómez and Taimi Carrero have found a successful recipe in St. Pete by mixing art and gastronomy. From their space at The Foodie Labs, which is a culinary incubator for entrepreneurs in the Warehouse Arts District, Apululu Latin Street Food has become an extension of Taimi and Raciel’s hearts. Their unique menu, which includes Cuban burritos, latinga chicken tacos, and dishes combining Mexican and Cuban influences, reflects their personal story.”
